According to the agreement between the Research Institute of Preventive Medicine named after Academician Y.D. Dalenov (Research Institute) "Astana Medical University" and "Astana City Education Department" specialists of the Research Institute have developed a 4-week perspective menu. The menu of dishes was developed for catering students in general education organizations of Astana city, taking into account the physiological needs for energy, nutrients in accordance with age and time of year.
The staff of the Research Institute has many years of experience in catering for various groups of the population, including school-age children. Specialists in the field of nutrition took part in this development: candidates of medical sciences, professors, associate professors, nutritionists, technologists, researchers in the field of nutrition who have experience in developing a menu of diets for students of NIS, the military, for the category of persons working in hazardous industries.
The diet menu for school-age children has been developed for catering in general education organizations in Astana and includes hot meals for children of the first shift and hot meals for children of the second shift.
Taking into account the time of catering for children, hot dishes in the form of cereal dishes (porridge) were offered in the first half of the day with a detailed indication of the ingredients of the dishes and the calculation of their cost based on the proposed market prices for food. Hot meals for children of the second shift include a hot meat or fish dish, side dishes. Moreover, during the week, a meat dish was presented 2 times and a mincemeat dish 2 times. Side dishes include cereals, vegetables and pasta. When developing the technology of the dish, international recommendations on reduced salt and sugar content were taken into account, and the outputs and technologies were previously discussed with representatives of persons implementing school meals. The children's diet menu does not include extractive drinks, such as tea, coffee drinks, and the dishes offered instead are simple to prepare and technologically sophisticated. In the future, it is planned to train employees of the canteen and medical workers of educational institutions by the staff of the Research Institute.
